Oatmeal Lace Cookies

Ingredients:

2 cups of light brown sugar
1 cup of butter
1/4 cup of all-purpose flour
2 1/2 cups of rolled oats
1 teaspoon of salt
1 egg, gently whisked
2 teaspoons of vanilla extract

Instructions:

1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a saucepan, melt the butter over low heat until completely melted.

3. Stir in the packed light brown sugar until well combined.

4. Remove the saucepan from the heat and add the vanilla, flour, and salt. Let cool for 10 mins or so.

5. Add the gently whisked egg and oats to the mixture. Stir until the batter is well combined.

6. Drop rounded tablespoons of the batter onto the prepared baking sheet, leaving enough space between each cookie as they will spread during baking. Make sure each cookie is spread out in a circle shape such that oats are on a single layer.

7. Bake the cookies for about 8-10 minutes or until they turn golden brown around the edges.

8. Remove the baking sheet from the oven and let the cookies cool for a few minutes before transferring them to a wire rack to cool completely.
